Easter Shortbread Cookies

It’s the weekend before Easter so we are making our FAVORITE shortbread cookies and decorating cute little bunnies and eggs. These cookies are so good so I’m warning you if you’re trying to eat healthy good luck with that if you decide to make these.

This recipe is my grandmas and every year as kids she would make these cookies, I haven’t tasted a shortbread cookie that compares!

My house is completely covered in flour and memories & I love every moment of it!

In the past we have made our own frosting and it’s so much better but this time I just bought pink & black cookie icing & some sprinkles.

We like to eat a few of course and then the other cookies we package up in clear bags and tie with ribbon for teachers & friends.

GRANDMAS SHORTBREAD COOKIE RECIPE

1 1/2 pds of butter (refrigerated)

2 cups powdered sugar

1 1/2 tsp vanilla

5 1/2 cups flour

In your mixer start to mix your cold butter, slowly add powdered sugar, vanilla & flour. Mix until creamy.

Lightly flour your surface, roll out to about 1/4-1/8 inch thick and use your cookie cutters.

Bake at 350 for 10-12 minutes

(Makes approx 60 medium cookies)
